The reaction with iodine was long used for analyzing the number of double bonds, that is, the degree of saturation. Iodine solutions have a violet color. In the reaction with a double bond, one iodine molecule will lose its color.

In iodine number determinations (titration) the quantity of iodine is determined which will just still be decolored by the fat or oil. This provides a direct measure of the number of double bonds present in the sample

The iodine number in chemistry is the mass of iodine in grams that is consumed by 100 grams of a chemical substance

In a typical procedure the acid is treated with an excess of the Hanus solution which is a solution of iodobromine (BrI). Unreacted iodobromine is reacted with potassium iodide which converts it to iodine. The iodine concentration is then determined by titration with sodium thiosulfate.
